Rooibos grows in the region of Western Cape province of South Africa. As with black and green tea, rooibos can undergo oxidation, or not. So, the fermented rooibos is usually reddish-brown in colour, and unoxidised rooibos is green, thus it is often referred to as “the green rooibos”. However, most rooibos leaves are actually fermented, hence the name meaning “red bush”.
